Preparing and serving chicha

Chicha, an Andean corn beer, was prepared in large ceramic urns called wirkes. The corn was left to soak in the urns and rotated occasionally with wooden paddles. In ancient times in Arica, chicha was drunk from flared-mouth cups called keros, while in San Pedro territory gourd cups were more often used for drinking this beverage.
